Dandelion and Spring Onion with Warm Vinaigrette

Freshly emerged dandelions herald spring—and good eating. Dandelions grow in abundance everywhere in the spring, it seems, but be sure viagra 100mg to only choose the ones which grow well away from the road. Your own backyard is best. Is there anything more enriching than picking your own wild dinner greens right outside your own door? Here is our own recipe for dandelions:

1 pound or so of dandelion greens, thoroughly washed and trimmed
1 bunch of spring onions or wild onions (12 or so), washed, trimmed and sliced
6 slices of bacon
1 hard boiled egg, peeled and sliced
Vinaigrette*
Salt and pepper to taste

Cook bacon, drain on paper towels, dice when cool. Toss dandelions and onions together, sprinkle bacon on top. Add sliced egg. Warm the vinaigrette and pour over, to taste. Add salt and pepper to taste, as well. Serve immediately.

*Vinaigrette:

½ cup red wine vinegar
¼ cup olive oil
